Turban Squash Risotto

Ingredients

  • 2 1/2 lbs. turban squash, steamed and mashed
  • 1/2 onion, chopped
  • 1/2 T. garlic, chopped
  • 1/1 lb. arborio rice
  • 1/2 t. saffron
  • ½ gal. vegetable stock
  • 1/2 stick butter

Sautee´ onion and garlic in butter add rice and stir to coat. Add stock, saffron and squash. Stir and cover till done (approx. 30 mins)
